Frozen Breakfast Burritos

18 Eggs
15 slices cooked and crumbled Bacon
1 tsp Salt
1 tsp Pepper
2 cup shredded cheddar cheese
12 flour tortillas
5 potatoes
2 Tbsp olive oil |

Instructions: |

1) Prepare Potatoes:
Bring a large pot of water to a boil over high heat. Add quartered potatoes and simmer for 10-15 minutes, until potatoes are still firm, but can be pierced with a fork. Drain potatoes and cool slightly. When potatoes are cool enough to handle, dice them into small cubes. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add potatoes . Cook, stirring often, until potatoes are golden brown and cooked through, about 15 minutes.
2)Prepare Eggs
Crack all eggs in a bowl and add salt and pepper to taste. Spray frying pan with cooking spray, Heat pan to medium heat, add eggs and scramble. Remove from heat
3) Make burritos
Sprinkle cheese onto each tortilla, top with potatoes, eggs and bacon. Fold and wrap each burrito in plastic wrap, then wrap in foil. Layer on cookie sheet and freeze. Store in a Freezer bag for up to 3 months
4)Reheat
Unwrap and heat in the microwave for 1-2 minutes. You can wrap it in a paper towel to ensure your tortilla isn’t soggy. |
